Yolk moisture content varies because of osmotic differences between the yolk and albumen which are separated by the semipermeable vitelline membrane of the yolk (Sharp and Powell, 1930; and Hoist and Almquist, 1931). Moisture movement across the vitelline membrane of the yolk is influenced by temperature (Smith, 1932) and ambient pH (Fromm, 1966). Romanoff and Romanoff (1949) reported that as the moisture content of the yolk increases the vitelline membrane has a tendency to weaken because of the increased volume of the yolk.
