In this study, the taste properties of four protease inhibitors (indinavir, ritonavir, saquinavir, and nelfinavir) were investigated in unmedicated HIV-infected patients and healthy controls. Three of the four protease inhibitors (indinavir, ritonavir, and saquinavir) were found to be predominantly bitter (with additional qualities of medicinal, metallic, astringent, sour, and burning). Nelfinavir was found to be relatively tasteless. HIV-infected and uninfected control subjects detected protease inhibitors at similar concentrations, but HIV-infected subjects perceived suprathreshold concentrations as more bitter than controls. Detection thresholds ranged from 0.0061 mM for saquinavir in HIV-infected patients to 0.0702 mM for ritonavir in uninfected control subjects. Suprathreshold studies indicated that protease inhibitors modified the taste perception of a variety of other taste compounds. These results are consistent with clinical findings that protease inhibitors produce taste complaints that can impact patient compliance.","is_dataset_classified":null,"base_score":4.0943445622221,"endowment":4.0943445622221,"datacite_reuse_total":0,"file_count":0,"downloads":0,"views":0,"has_version_chain":false,"is_dataset":false,"is_oa":false,"pmid":"10501290","pmcid":null,"openalex_id":"https://openalex.org/W2001566781","authors":[],"funders":[{"funder_name":"NIA NIH HHS","grant_id":"5T32 AG00029","title":null},{"funder_name":"NIDCD NIH HHS","grant_id":"5R01 DC02921","title":null}],"total_grants":2,"fwci":1.9135,"citation_percentile":0.85002206,"influential_citations":0,"citation_trend":[{"year":2012,"count":3},{"year":2013,"count":3},{"year":2014,"count":1},{"year":2015,"count":2},{"year":2016,"count":2},{"year":2017,"count":1},{"year":2018,"count":2},{"year":2019,"count":4},{"year":2020,"count":1},{"year":2021,"count":1},{"year":2022,"count":5},{"year":2023,"count":3},{"year":2025,"count":4}],"oa_status":"closed","license":"https://www.elsevier.com/tdm/userlicense/1.0/","oa_locations":[{"url":"https://api.elsevier.com/content/article/PII:S0899900799001525?httpAccept=text/xml","host_type":"publisher"},{"url":"https://api.elsevier.com/content/article/PII:S0899900799001525?httpAccept=text/plain","host_type":"publisher"},{"url":"https://doi.org/10.1016/s0899-9007(99)00152-5","host_type":"journal"},{"url":"https://pubmed.ncbi.nlm.nih.gov/10501290","host_type":"repository"}],"fields_of_study":["Biochemical Analysis and Sensing Techniques","HIV Research and Treatment","Herpesvirus Infections and Treatments","Adult","Female","HIV Infections","HIV Protease Inhibitors","Humans","Indinavir","Male","Nelfinavir","Ritonavir","Saquinavir","Taste","Taste Disorders"],"mesh_terms":["Adult","Female","Humans","Male","Taste","Taste Disorders","HIV Infections","HIV Protease Inhibitors","Saquinavir","Ritonavir","Indinavir","Nelfinavir"],"keywords":["Saquinavir","Indinavir","Nelfinavir","Ritonavir","Protease","Taste","Protease inhibitor (pharmacology)","Pharmacology","Medicine","Bitter taste","Virology","Biology","Sida","Human immunodeficiency virus (HIV)","Viral disease","Food science","Biochemistry","Viral load","Enzyme"],"sdg_mappings":[{"sdg_number":0,"sdg_label":"Good health and well-being"}],"linked_datasets":[],"clinical_trials":[],"software_tools":[],"database_accessions":[],"source":"live","citation_network_status":"fetched"},"created_at":"2026-08-11T18:25:57.372000Z","pmid":null,"pmcid":null,"fwci":null,"citation_percentile":null,"influential_citations":0,"oa_status":null,"license":null,"views":0,"total_file_size_bytes":0,"version_count":0,"fair_f":null,"fair_a":null,"fair_i":null,"fair_r":null,"fair_zscore":null,"fair_rationale":null,"fair_model":null,"fair_agent_version":null,"fair_fulltext_source":null,"fair_has_llm":null,"fair_computed_at":null,"clinical_trials":[],"software_tools":[],"db_accessions":[],"linked_datasets":[],"topics":[]}
