{"doi":"10.1016/j.cdnut.2024.102759","title":"The Association Between a Metabolomics Signature Reflective of Ultra-Processed Food Intake and Type 2 Diabetes Risk in the Hispanic Community Health Study/Study of Latinos","abstract":"increasingly common, but no study has examined their potential associations.Methods: Data were obtained from the UK Biobank (project #87303).At baseline 2009-2010, participants answered the yes/no questions of their past 24-hr meal type: takeaway/delivery meal, restaurant meal, sandwiches from shops, ready prepared meal, or home cooked meal.Incident MASLD was defined by in-hospital medical records.Participants with a history of MASLD and missing covariates (age, sex, socioeconomic status, smoking status, alcohol intake, physical activity, body mass index, and total energy intake) were excluded in Cox proportional hazards regression of each meal type and incident MASLD.In a subset of participants, between 2014-2015, multiecho spoiled-gradient-echo acquisition was used to calculate the liver steatosis level using the proton density fat fraction (PDFF).In the secondary analysis, logistic regression was used to analyze the imaging-proven steatosis, defined as PDFF 5%, adjusting for the same set of covariates.Results: Among 55,492 participants in the primary analysis, during the follow-up, 483 MASLD was documented.Having takeaway/delivery meal was associated with a significantly higher risk of developing MASLD (adjusted hazard ratio1.50;95% CI: 1.03-2.17;P0.03; comparing yes to no).Among 5121 participants in the secondary analysis, 1395 had imagingproven steatosis.Having takeaway/delivery meal was also associated with a significantly higher risk of steatosis indicated by high PDFF (adjusted odds ratio1.43;95% CI: 1.07-1.92;P0.02).Conclusions: These preliminary prospective results suggest that takeaway or delivery meal was associated with a higher risk of steatotic liver disease, as suggested by both liver imaging marker and clinical diagnosis, although the single 24-hr recall may not represent the long-term dietary habit.","journal":"Current Developments in Nutrition","year":2024,"id":500242,"datarank":0.0,"base_score":0.0,"endowment":0.0,"self_citation_contribution":0.0,"citation_network_contribution":0.0,"self_endowment_contribution":0.0,"citer_contribution":0.0,"corpus_percentile":null,"corpus_rank":null,"citation_count":0,"citer_count":0,"citers_with_citation_signal":0,"citers_with_endowment":0,"datacite_reuse_total":0,"is_dataset":false,"is_dataset_confidence":0.7624,"is_data_producer":false,"deposit_databanks":null,"is_oa":true,"file_count":0,"downloads":0,"has_version_chain":false,"published_date":"2024-01-01","fair_score":null,"fair_percentile":null,"algorithm_id":"datarank_citation_only_1hop_v6","ranking_scope":"data_only","authors":[{"id":558715,"name":"Magdalena Sevilla-González","orcid":"0000-0001-6135-9998","position":1,"is_corresponding":false},{"id":230957,"name":"Deirdre K.
